| First Marinate the fish approximately 24 hours in fresh lemon juice. The fish must be completely covered in lemon juice for the lemon juice to cook it |
| When the fish is soft and has absorbed all the lemon juice, pull it apart with your fingers into small bits. |
| The fish should be in small bits after it is pulled apart. |
| Add 4 teaspoons of salt, be sure to taste before adding too much depending on how you like it. |
| Mince your tomatoes and add them to your bowl with the fish. |
| Mince your serrano chile and onion into very fine bits and add to the fish mixture. |
| top the mixture with chopped fresh cilantro. |
| Mix all of your ingredients together. |
| Serve your ceviche on a tostada. I recommend eating your tostada topped with more lemon juice, tapatio and a nice cold XX beer. ENJOY :) |
| Your well mixed ceviche should appear something like this. It is ready to serve and eat. |
